Baked Chicken with Dijon & Balsamic Vinegar


This will be a rare occasion that I post a recipe, lol.  For one, I don’t like to cook and don’t know how to cook; two, I hate cleaning up after dinner. But let me tell you, this baked chicken recipe is SO good and it’s ridiculously fast and easy, that even I can do it! So I have to share it with you! I’m not even going to pretend to know what I’m talking about with a whole blog post about cooking this chicken, so here it is….


4-5 sliced, ready to cook chicken breast

1 tsp dijon mustard

1/2 tsp each of thyme, sage, & rosemary

salt and pepper to taste

2 tbsp traditional balsamic vinegar

1 tbsp olive oil

garlic powder to taste



Preheat oven to 400 degrees. Place the chicken in a single layer in a 13×9 baking dish. Brush each piece lightly with the dijon mustard. Sprinkle with garlic powder, herbs, and spices. Drizzle with balsamic vinegar and olive oil. Place in oven and bake until chicken is brown and completely cooked (optional occasional basting with pan juices-FYI…I did not do this). Cooking time will vary; the recipe says 50 minutes, but mine was done in 40.
